<p>妈的晚上煎牛排玩.</p><p>收集相关资料:</p><p>通常点牛排,或是在高级一点的餐厅点牛肉汉堡,服务生都会这样问你How do you like it cooked? 回答的方式也有几种:全熟是 well done,七分熟是medium well,五分熟是medium,四分熟是medium rare,三分熟是 rare。<br /><br />直观的理解牛排的熟度可以做如下解释。<br /><br />Very rare steak:牛排内部为血红色而且温度不高。<br />一分熟牛排(rare):牛排内部为血红色且内部各处保持一定温度(高于very rare steak)。<br />三分熟牛排(medium rare):内部为桃红且带有相当热度。<br />五分熟牛排(medium):牛排内部为粉红且夹杂着浅灰和综褐色,整个牛排都很烫。<br />七分熟牛排(medium well):牛排内部主要为浅灰综褐色,夹杂着粉红色。<br />全熟牛排(well done):牛排内部为褐色。<br /><br />按温度划分<br />Very rare steak:120°<br />一分熟牛排(rare):125°<br />三分熟牛排(medium rare):130-135°<br />五分熟牛排(medium):140-145°<br />七分熟牛排(medium well):150-155°<br />全熟牛排(well done):160°<br /><br />按触觉划分(这个英文翻译比较困难,请自己理解)<br /><br />Very rare steak:feels soft and squishy<br />一分熟牛排(rare):soft to the touch<br />三分熟牛排(medium rare):yields gently to the touch<br />五分熟牛排(medium):yields only slightly to the touch, beginning to firm up<br />七分熟牛排(medium well):firm to the touch<br />全熟牛排(well done):hard to the touch </p><p>-----------------------</p><p>现在市面和酒店通常可以吃到的牛排有4种:t骨牛排(美国产),西冷牛排(澳大利亚产),肉眼牛排(美国,澳大利亚产),日本牛排(日本,澳大利亚产)<br /><br />以上4种都属于口感比较好的牛排,国产的牛排没有办法和进口的比口感<br />平均价格都比较昂贵,一块200克都需要80圆以上<br /><br />做牛排所需调料:盐,白胡椒粉,黑胡椒粉,bbq牛排汁<br /><br />制作方法<br /><br />1.买回来的牛排一般都冰冻的,所以先放微波炉解冻<br />2.解冻好的牛排千万不好洗,一般牛排都会很干净的,把牛排2面均匀的撒上盐和胡椒粉,注意不要太多<br />3.准备好个平底锅,最好平底铁锅,不平的千万不要用。。。。锅烧热,加点油,不要多,把牛排平放在锅中,之后就不要动了,家里用煤气的一般中火(第一次做一定要中火),熟悉了可以该大火!牛排在锅中平均2分钟换一面,没有事千万不要用什么锅铲去压,那样汁水会流失,每2分钟换次面,10分钟就可以达到6-7成熟,如果接受不了,需要全熟,可以延长4到5分钟<br />4.装盘,淋bbq汁</p><p>----------------------------</p><p>“在上等的西餐馆中,牛排之所以吃起来比较好,除了肉好之外,他们把肉买回来后一般都在冷藏继续AGE 5-10天,让肉充分发酵。</p><p><br /> 至于你问题在于你的烹调方式。在专业的厨房,我们的做法是,GRILL/PAN FRY,然后在OVEN里面完成。如果是用PAN FRY,先将OVEN调至450F预热。锅最好用平底铁锅或厚底(很重)的洋炒锅(不粘锅为最后选择),放一点点油(不能多),将锅烧到非常热(开始冒烟),然后将肉撒上salt,pepper和一些油, </p><p><br />将presentation的一面放上,一两分钟后(这时肉已经不再粘在锅上)翻过另一面,并送入OVEN中2-3寸厚的一般7-8分钟就可以了( 具体看你要的生熟程序。你还可以用工具或手按肉,根据软硬来判断生熟程序)。”<br /></p>
